Almond Butter Brownies – Gluten and Dairy Free

Almond Butter Brownies

Ingredients

128g Almond Butter

4 tbsp honey

64gs and 2 tbsp coconut sugar

32g  unsweetened apple sauce

1tbsp vanilla essence

6 tbsp cocoa powder

3 and ½ tbsp coconut flour

¾ tsp baking powder

 

  1. Pre heat over to 180 degrees and line bottom of an 8×8 inch tin with parchment paper.
  2. Place Almond Butter along with honey in a microwavable bowl and microwave gently under melted and smooth. Around 60 seconds
  3. Add coconut sugar and mix into the mixture gently to avoid air bubbles
  4. Add apple sauce and vanilla essence and mix into the mixture.
  5. Add cocoa powder, coconut flower and baking power. Mix gently to avoid too much air in the mixture
  6. Pour into the baking tray and smooth out evenly.
  7. Bake for 25-30 minutes. Put knife into the mixture and if it comes out clean then it is cooked.
  8. Leave to cool and then enjoy.

 

Very tasty brownies and really simple to make!

Almond butter and Chocolate Chip Muffins – Gluten and Dairy Free

 

75g Coconut Flour

100g Coconut Oil

100g Almond Butter

4 x Eggs

100g Honey

Chocolate chips – dairy free

½ teaspoon Baking soda

1 teaspoon Vanilla essence

 

 

1- Pre heat over to 180 degrees. Place muffin cases in baking tray.

2– Mix the coconut flour and baking powder in a bowl

3 Add the Almond Butter, Eggs, Honey and vanilla essence

4- Melt the Coconut oil and then add to the mixture. Mix until smooth

5 – Add the chocolate chips to the mixture and stir well.

6- Scoop the mixture into the muffin cases on the baking tray.

7 – Bake the muffins for around 18-20 minutes

8 – Leave to cool down

 

Makes 12 muffins

It’s the Weekend!!

The best feeling has to be waking up on a Saturday morning and realising you don’t have to go to work.

This weekend I hope to go on a nice long walk; eat some nice food and just make the most of a couple of days away from work to have some fun.

I have recently signed up for a Steemit account and have started to use it over the last few days. My boyfriend recently introduced it to me so I thought I would take a look into and sign up and basically have a play around and see what it is all about. I do not know anybody else who has an account at the minute so thought I would blog about it on here to see if anyone else has an account.

So far its seem very simple and basic to make posts and it is fairly easy to view other peoples sites and pages. I think it will remain simple for a while but I have heard that they are constantly working on new changes as it becomes more popular. I am quite enjoying posting on a new platform so I think I will stick with it and see how it progresses.
